What’s Actually in a Half Beef
(And Why Grassfed Beef Feeds Your Family Differently)
Before we talk numbers, let’s talk nourishment.
Grassfed beef is not the same as grocery store beef.
When cattle are raised on pasture and finished on grass like ours, the beef is naturally:
- Higher in Omega-3 fatty acids
- Richer in CLA (conjugated linoleic acid)
- Higher in antioxidants like Vitamin E
- More mineral dense
That means more nutrition in every pound you bring home.
You’re not just filling a freezer.
You’re filling it with beef that works harder for your family.
Now let’s break down what a Half Beef actually includes.
How Much Beef Comes Home?
With a Half Beef from our ranch, you can expect:
Approximately 160–180 pounds of finished, take-home beef.
That’s dry-aged, cut, trimmed, vacuum sealed, and ready for your freezer.
For most families who cook beef a few nights a week, that typically lasts 10–12 months.
One decision.
Nearly a year of beef.
Important: Natural Variation & Cutting Choices
This part matters.
Every animal is different.
Some are heavier framed.
Some carry more muscling.
Some produce slightly more ground, others a few extra steaks.
And our individual butcher cuts may vary slightly - remember, each beef is cut by hand by our artisanal butchers.
Because this is whoe-animal beef — not factory-boxed meat — exact quantities will vary slightly from animal to animal and based on how you choose your cuts.
We give honest averages based on years of experience, but natural variation is part of real ranching.
And that’s something we stand behind.
🥩 The Steaks (Approximately 35–45 Pounds)
A typical Half Beef may include:
- 8–12 Ribeye Steaks
- 8–12 Sirloin Steaks
- 6–10 New York Strips or T-Bones
- 4–8 Filets
- 2–4 Flank or Skirt Steaks
- 2–4 Packages of Short Ribs
That’s roughly 25–40 steak meals.
Not just “special occasion” dinners.
Real steak nights throughout the year.
🍲 Roasts & Slow-Cooker Favorites (Approximately 40–50 Pounds)
You can expect comforting cuts such as:
- 6–8 Chuck Roasts
- 2–4 Rump Roasts
- 2–4 Arm Roasts
- 1–2 Briskets
- 1–2 Cross-Cut Shanks
Most roasts average 3–4 pounds.
One roast often becomes:
Dinner.
Leftovers.
Another full meal.
🍔 Ground Beef — The Backbone (Approximately 60–80 Pounds)
Ground beef makes up the largest portion — because it’s what families use most.
You’ll receive roughly:
60–80 one-pound packages of ground beef.
That’s:
Tacos.
Spaghetti.
Chili.
Burgers.
Breakfast scrambles.
Meatballs.
When the ground is stocked, dinner stress goes down.
🦴 Bones & Organ Meats (If You Choose Them)
If you select whole-animal options, your Half may also include:
- 10–20 pounds of soup bones
- 4–8 marrow bones
- 1 liver
- 1 heart
- Oxtail
What 160–180 Pounds Really Means
If your family eats beef:
- 3 times per week
- Using 1–2 pounds per meal
A Half Beef typically lasts 10–12 months.
That means:
Fewer grocery runs.
More consistency.
More control over what feeds your family.
You open the freezer — and dinner is already there.
