There is a big difference between having beef in the freezer and knowing what to do with it.
A round roast can be one of those cuts that gets pushed around while you reach for ground beef again. It looks like it should become a special Sunday supper, but then the week gets busy and the roast stays frozen.
Let’s make that roast earn its space in your freezer.
With one simple oven cook, a 3 to 4 pound round roast can become three completely different family meals:
● Roast beef with sweet potatoes and broccoli
● Grab-and-go roast beef wraps
● A quick beef and broccoli stir-fry
Cook once. Eat three times. Make the rest of the week easier.
The Main Cook: Simple Oven-Roasted Round Roast
What You Need
● 1 round roast, approximately 3 to 4 pounds
● 1 tablespoon olive oil
● Salt
● Black pepper
● Garlic powder
● Dried rosemary
How to Cook It
1. Heat your oven to 325°F. (Or throw it in the Crock Pot on low for the day, add just a splash of Broth or water, less than 1 cup)
2. Pat the roast dry, then rub it with olive oil, salt, pepper, garlic powder and rosemary.
3. Place it in a roasting pan and cook until the center reaches 140°F.
4. Remove it from the oven and let it rest for 10 to 15 minutes. The temperature should continue rising toward 145°F.
5. Slice only what you need for the first meal. Keep the remaining beef in two larger pieces so it stays juicy.
This makes approximately 12 to 18 servings, depending on your family and how generously you slice it.
Meal One: Roast Beef, Sweet Potatoes and Broccoli
Serve warm slices of roast beef with roasted sweet potatoes and broccoli. Spoon a little beef broth or pan juice over the meat.
This is your traditional roast dinner, but there is no need to spend the whole afternoon making it complicated.
Serves: 4 to 6
Meal Two: RanchMama Roast Beef Wraps
Once the roast is chilled, it will be much easier to slice thinly.
Layer the sliced beef in tortillas with lettuce, tomatoes, cucumbers and shredded cheese. Add mustard, horseradish sauce or plain Greek yogurt.
These wraps work for a quick supper, packed lunches or the person eating in the truck between one job and the next.
Serves: 4 to 6
Meal Three: 15-Minute Beef and Broccoli
Slice the final portion of roast beef into thin strips.
Stir-fry broccoli and sliced bell pepper until they are tender-crisp. Add the cooked beef during the final few minutes with soy sauce or coconut aminos. Serve everything over rice.
The beef only needs to warm through, so supper can be on the table in about 15 minutes.
Serves: 4 to 6
